A 3-unit restaurant concept operated by Acapulco Restaurants. They had a colorful southwestern approach to their cooking that we wanted to reflect in the menu design. 

I did not realize until later that saguaro cactus only grew in Arizona, which is nowhere near El Paso.  But then,  the restaurants were nowhere near El Paso either!
